At chef Stephen Powell’s first kitchen job, trash was just trash. Taking out the bin was a chore, an annoyance. Years later when he served in the Navy and saw a case of meat thrown overboard, that was something else. Wasteful. That’s when food waste started weighing on his conscience. Now he’s taking action nearly four decades after starting his career.
